Kauai's Blossoming Lotus celebrates Earth Day by becoming the first Certified Green Restaurant in all of Hawaii. Blossoming Lotus and Lotus Root - Hawaii's First Environmentally Responsible Restaurants to earn America's Only Nationwide Environmental Restaurant Certification
Kauai, HI- April 22, 2005 marks a turning point in Hawaii's restaurant industry. Two restaurants have just become Hawaii's first Certified Green Restaurants. These restaurants join over 130 restaurants around the U.S., which are earning this distinction by having a full-scale recycling program, being free of polystyrene foam, and committing to making four new environmental changes per year.
Blossoming Lotus just replaced their petroleum-based plastics with vegetable-plastics that function just like plastic but biodegrade in a compost pile. This step could bring Blossoming Lotus and Lotus Root to be Near-Zero Waste Restaurants. These Hawaii leaders will also integrate more energy and water efficient steps as part of their 4-step per year commitment. With the restaurant industry being the #1 consumer of electricity in the retail sector, Certified Green Restaurants like Blossoming Lotus and Lotus Root are leading the way towards a safer and cleaner relationship with electricity consumption.

The Blossoming Lotus is a 90 seat, full service vegan restaurant with an outdoor tropical courtyard and nightly live entertainment in the Historic Dragon Building in Downtown Kapaa. Winners of PETA's "restaurant of the month' award for all of the US, the Blossoming Lotus was also voted the "#1 vegetarian restaurant in Hawaii' by Zento Magazine.
Their nationally distributed cookbook was also just named a finalist in two international book competitions: Nautilus Awards: Health and Healing category & Best New Press category; and Foreword Magazine: Best Cookbook 2004
The Lotus Root is the new Juice Bar and Bakery of the Blossoming Lotus serving delicious baked goods, homemade vegan ice-cream, fresh organic juices and island smoothies.
